There are a few recipes that become absolute staples in a busy house, and these Breakfast Boost Waffles are one. Waffles and pancakes are a firm favourite with my two, and always a guaranteed win at the table. I love having a batch ready in the freezer for busy school mornings when time is tight. They’re quick to reheat, easy to grab, and always eaten without any fuss.

Over time, I’ve tweaked the recipe to add a little extra goodness where I can. Nothing complicated, just small changes that make them more nourishing while still tasting just as good. In this version, I’ve added wholemeal flour and ground nuts or seeds for extra fibre and nutrition. It’s an easy way to give everyone a boost without changing something they already love.

The batter is really simple to throw together with everyday ingredients you likely already have. It includes flour, baking powder, ground seeds or nuts, milk, eggs, and melted butter. If the batter feels too thick, just loosen it with a small splash of milk. They cook beautifully in a waffle maker, golden outside and soft in the middle. The recipe also works perfectly as pancakes if you don’t have a waffle iron.

We usually serve them with fresh fruit and yogurt for a simple, balanced breakfast. The yogurt adds protein, and everything works really well together. A drizzle of honey on top adds a little extra sweetness. These often go into lunchboxes too, just served in a slightly different way. I pack them with yogurt, chia jam , and a little honey for dipping. It feels like a treat but still has a nice balance.

Breakfast Boost Waffles

These Breakfast Boost Waffles are quick, easy, and packed with nutrition. Perfect for busy mornings, they’re freezer-friendly and work as waffles or pancakes.

Ingredients
  

  • 150 g self raising flour or plain flour sieved with 1 tsp baking powder
  • 100 g wholemeal flour
  • 1 tsp baking powder
  • 2 tbsp ground nuts or seeds
  • 300 ml milk – a dash more if needed
  • 2 eggs
  • 50 g butter melted

Instructions
 

  • Preheat the waffle maker.
  • Measure the self raising flour, wholemeal flour, baking powder and breakfast boost into a large bowl. Mix well.
  • Measure the milk and eggs into a jug, whisk to combine.
  • Pour the milk mix into the bowl with the dry ingredients gently mix until the flour is incorporated, it may have lumps that’s fine. Don’t over mix. Finally stir in the melted butter.
  • Spray the waffle maker with oil. Scoop a large dollop, equal to 2 dessert spoons of mix per waffle, cook for a few minutes until golden. Serve with yoghurt and fresh berries.
  • Storage: Store at room temperature for up to 3 days or freeze for 3 months.
