If you’re looking for a quick, easy and delicious lunch idea, this Beetroot & Goat’s Cheese Cheat’s Quiche is one to add to your meal plan. It’s packed with protein, full of flavour and takes hardly any time to throw together, making it perfect for busy weekdays.

I’ve spoken before about making more of an effort to slow down and actually enjoy my lunch instead of grabbing something on the go. Taking that little bit of time in the middle of the day makes such a difference, and recipes like this make it easy to eat something that’s both nutritious and satisfying without spending ages in the kitchen.

Why You’ll Love This Beetroot & Goat’s Cheese Cheat’s Quiche

  • High in protein to help keep you fuller for longer.
  • Ready in no time.
  • Made with simple ingredients.
  • Perfect for lunch, meal prep or even a light dinner.
  • No pastry needed!

The Wrap Hack

My favourite part of this recipe has to be using a tortilla wrap instead of traditional pastry. It creates a wonderfully crisp shell while cutting down both the preparation time and the calories. It’s one of those simple kitchen hacks that completely changes how quickly you can make a homemade quiche.

Honestly, once you’ve tried it, you’ll wonder why you ever bothered making pastry for a quick lunch!

Friend Approved!

I had a friend over during the week and served her a slice for lunch. She absolutely loved it and couldn’t believe how quickly it had come together.

When I told her that the wrap was actually the quiche shell instead of using pastry, she was amazed. It’s such an easy shortcut that saves so much time without compromising on taste or texture.

Perfect for Meal Prep

This cheat’s quiche is also brilliant for meal prepping. Make one at the beginning of the week and enjoy slices cold or warmed up over the next couple of days. Pair it with a fresh salad, some homemade slaw or a bowl of soup for a more substantial meal.

If you give it a try, I’d love to hear what you think in the comments below. Don’t forget to tag me on social media if you make it—I always love seeing your creations! Ingredients

  • 1 tortilla wrap
  • 3 eggs
  • 100 g cottage cheese
  • 70 g cooked beetroot not pickled 1 beet, sliced
  • ½ small red onion finely sliced
  • 20 g or a handful baby spinach
  • 5 small tsp relish/ fig preserve
  • 70 g goat cheese crumbled I used a mix of cheddar and mozzarella
  • Salt and pepper to season
  • try changing the flavour with pepperoni, smoked salmon, onion, mushrooms, fresh herbs or feta

Instructions

  • Preheat the oven 170ºc. Use an 8 inch or 9 inch dish or cake tin.
  • (can also be cooked in a preheated air fryer, 170ºc for 12 minutes – air fryer times can vary.)
  • Important: Add a piece of non-stick parchment paper to the dish, this will prevent the tortilla wrap from sticking or the egg leaking out, and it will make it easier to remove once cooked. (not shown in the video_
  • Place the tortilla on top of the paper in the tin, gently push it down to create a bowl shape. Crack the eggs in and add the cottage cheese, season and whisk with a fork.
  • Next add the baby spinach, push down with the back of the fork. Top with sliced beetroot, sliced red onion, dollops of relish. Crumble the goats cheese on top and bake for 20-25 minutes, until the eggs have set and the cheese has melted.
  • Leave to cool for a few minutes then remove from the tin. Slice and serve with salad.
  • Note: If the bottom is soggy and soft, try toasting (after removing from the tin) if possible on a non-stick dry frying pan on a medium heat, but be careful not to let it burn.
  • Eat hot or cold.
  • Storage: Keep in the fridge for 3 days. Reheat in the oven or air fryer 180c for 5 minutes.
