Preheat the oven 170ºc. Use an 8 inch or 9 inch dish or cake tin.
(can also be cooked in a preheated air fryer, 170ºc for 12 minutes - air fryer times can vary.)
Important: Add a piece of non-stick parchment paper to the dish, this will prevent the tortilla wrap from sticking or the egg leaking out, and it will make it easier to remove once cooked. (not shown in the video_
Place the tortilla on top of the paper in the tin, gently push it down to create a bowl shape. Crack the eggs in and add the cottage cheese, season and whisk with a fork.
Next add the baby spinach, push down with the back of the fork. Top with sliced beetroot, sliced red onion, dollops of relish. Crumble the goats cheese on top and bake for 20-25 minutes, until the eggs have set and the cheese has melted.
Leave to cool for a few minutes then remove from the tin. Slice and serve with salad.
Note: If the bottom is soggy and soft, try toasting (after removing from the tin) if possible on a non-stick dry frying pan on a medium heat, but be careful not to let it burn.
Eat hot or cold.
Storage: Keep in the fridge for 3 days. Reheat in the oven or air fryer 180c for 5 minutes.
