The perfect school-night dinner

There are days when time just gets away from me. The routine goes out the window, there’s a million things happening, and before I know it, the freezer stash of prepped meals has already been used up!

Sound familiar?

That’s exactly when recipes like this come into their own. When the kids get home from school, I can quickly throw everything into one pot, pop it in the oven and get on with everything else that needs doing. By the time homework is tackled, bags are unpacked and everyone is finished running around, dinner is ready!

And the best part? There’s only one pot to wash afterwards, so there’s no arguing over who’s doing the washing up.

Why you’ll love this One-Pot Chicken Curry & Rice

  • Everything in one pot: No need for multiple pans or complicated steps.
  • Minimal prep: Simply add your ingredients, pop it in the oven and let it cook.
  • Full of flavour: A delicious, warming chicken curry with rice that cooks together beautifully.
  • Family friendly: A hearty and satisfying dinner that everyone can enjoy.
  • Less washing up: Always a winner on busy weeknights!
  • Perfect for busy days: Ideal when you need dinner sorted without spending hours in the kitchen.

A few tips for making this recipe

  • Use a large ovenproof pot: Make sure there’s enough room for the rice, chicken and liquid to cook together.
  • Measure your liquid: Getting the liquid-to-rice ratio right is important for perfectly cooked rice.
  • Keep the lid on: This helps trap the steam and allows the rice to cook evenly.
  • Let it rest: Once cooked, allow it to sit for a few minutes before fluffing the rice and serving.
