Equipment

Ingredients
  

  • 1 medium courgette – 370g – peeled & chopped
  • 100 g rolled oats porridge oats
  • 2 large eggs
  • Oil to coat the waffle maker

Instructions
 

  • Simply add the courgette, oats, and eggs to a powerful smoothie blender I used my Nutri-bullet blender..
  • Shake it up- so it’ll blend.If your blender is smaller than mine do it in batches.
  • Blend to a really smooth batter.
  • Heat your waffle maker, coat with oil, scoop on the batter and cook until golden.
  • Serve with your choice of toppings.
  • Storage-good for 3 days in the fridge.
  • Freeze for 3 months.
  • Reheat in a toaster or microwave for a few second.
