- 1 medium courgette – 370g – peeled & chopped
- 100 g rolled oats porridge oats
- 2 large eggs
- Oil to coat the waffle maker
Instructions
- Simply add the courgette, oats, and eggs to a powerful smoothie blender I used my Nutri-bullet blender..
- Shake it up- so it’ll blend.If your blender is smaller than mine do it in batches.
- Blend to a really smooth batter.
- Heat your waffle maker, coat with oil, scoop on the batter and cook until golden.
- Serve with your choice of toppings.
- Storage-good for 3 days in the fridge.
- Freeze for 3 months.
- Reheat in a toaster or microwave for a few second.
