Quick and Easy School Morning Pancakes
Mornings can be hectic, especially on school days! Finding a breakfast that’s nutritious, quick to prepare, and delicious can make all the difference. These school morning pancakes fit the bill perfectly! With just a handful of ingredients, they’re not only easy to whip up but also a hit with kids and adults alike. This makes 2 portions for my primary school kids. Let’s get started!

Ingredients
- 1 cup oats**(rolled or quick oats) (or substitute gluten free oats)
- 1 ripe banana or 1 apple peeled and sliced
- 2 eggs
- ½ tsp baking powder
- 2-3 tbsp milk (dairy or non-dairy)
Instructions
- All in one: Add all the ingredients into a powerful blender and blend until smooth1 cup oats**(rolled or quick oats)
- Heat the Pan. Preheat a non-stick pan over medium heat. A little oil or butter can help prevent sticking, but it’s optional if your pan is non-stick.
- Cook the Pancakes. Pour small amounts of batter onto the pan to form pancakes. Cook for about 2-3 minutes until bubbles appear on the surface. Flip carefully and cook for another 1-2 minutes until golden brown.
- Serve and Enjoy! Stack the pancakes on a plate and serve warm. They’re great on their own, but you can add toppings like fresh fruit, a drizzle of honey or maple syrup, or a spoonful of yogurt for extra flavour.

Lovely to heat that Allyson. Yes you can freeze these pancakes. Once cold place flat in ziplock bags. The freeze perfectly for 3 months. They’ll defrost within an hour. Toast or warm in the microwave for a few seconds. Lou x
