Mornings can be hectic, especially on school days! Finding a breakfast that’s nutritious, quick to prepare, and delicious can make all the difference. These school morning pancakes fit the bill perfectly! With just a handful of ingredients, they’re not only easy to whip up but also a hit with kids and adults alike. This makes 2 portions for my primary school kids. Let’s get started!
1cupoats**(rolled or quick oats)(or substitute gluten free oats)
1ripe banana or 1 apple peeled and sliced
2eggs
½tspbaking powder
2-3tbspmilk(dairy or non-dairy)
Instructions
All in one: Add all the ingredients into a powerful blender and blend until smooth
1 cup oats**(rolled or quick oats)
Heat the Pan. Preheat a non-stick pan over medium heat. A little oil or butter can help prevent sticking, but it’s optional if your pan is non-stick.
Cook the Pancakes. Pour small amounts of batter onto the pan to form pancakes. Cook for about 2-3 minutes until bubbles appear on the surface. Flip carefully and cook for another 1-2 minutes until golden brown.
Serve and Enjoy! Stack the pancakes on a plate and serve warm. They’re great on their own, but you can add toppings like fresh fruit, a drizzle of honey or maple syrup, or a spoonful of yogurt for extra flavour.
