- 1 medium courgette - 370g - peeled & chopped
- 100 g rolled oats porridge oats
- 2 large eggs
- Oil to coat the waffle maker
Simply add the courgette, oats, and eggs to a powerful smoothie blender I used my Nutri-bullet blender..
Shake it up- so it’ll blend.If your blender is smaller than mine do it in batches.
Blend to a really smooth batter.
Heat your waffle maker, coat with oil, scoop on the batter and cook until golden.
Serve with your choice of toppings.
Storage-good for 3 days in the fridge.
Freeze for 3 months.
Reheat in a toaster or microwave for a few second.
