One Pot Lemon Garlic Chicken is a perfect example of an easy, flavour-packed meal that breaks the dinner rut. We all fall into the habit of cooking the same meals on repeat, especially during busy weeks when time, energy, and fridge supplies run low.

I love an easy weeknight dinner, and this One Pot Lemon Garlic Chicken is one of our favourites. It tastes amazing, costs next to nothing, and works perfectly for those evenings when you walk in the door from the school run and think, “What are we having for dinner?”

As soon as I get home, I throw everything into the oven. By the time the uniforms are off and homework is done, dinner is ready. The best part? I only have one dish to clean, and that feels like a win after a long day.

One Pot Lemon Garlic Chicken

Simple one pot lemon garlic chicken with bright flavours. Quick, budget-friendly, and perfect for dinner with minimal cleanup.

Ingredients
  

  • 1 kg chicken thighs I used bone-in, skin on, approximately 8 pieces
  • 50 ml olive oil
  • 1 tablespoon paprika
  • 1 teaspoon dijon mustard
  • 3 fat cloves garlic finely grated
  • 2 lemons juiced and the zest of 1 lemon
  • 1 heaped teaspoon salt
  • ½ teaspoon black pepper
  • 8 medium potatoes peeled and cut into small wedges
  • 200 ml chicken stock I like Knorr stockpots
  • 1 lemon sliced into rings
  • 2 bay leaves
  • To serve: steamed broccoli, peas or cooked veg of your choice

Instructions
 

  • Preheat the oven 180ºC fan.
  • In a large bowl, mix the olive oil, garlic, lemon juice and zest, paprika, dijon mustard, salt and pepper. Add the chicken thighs and toss to coat. Marinate for up to 24 hours or cook straight away.
  • Make up the chicken stock. Cut the potatoes into wedges and lay them in a wide deep baking dish. Place the chicken on top, making sure not to overlap so the skin gets crispy later. Pour all the marinade into the dish along with the chicken stock, sliced lemon and bay leaves.
  • Bake in the oven for 1 hour checking half way through. It should be golden brown and cooked through.
  • Best eaten on day.
