Cajun Chicken Traybake

Ingredients
- 8 chicken thighs skin off
- 3 tablespoons cajun spice seasoning
- 1 teaspoon turmeric
- 1 tablespoon of oil
- 1 red pepper finely diced
- 400 g basmati rice rinsed well
- 900 ml hot chicken stock
- 2 bay leaf
- 1 cup frozen peas
- Salt and pepper to taste
- Fresh coriander and lime to serve
Instructions
- Heat oven to 180°C fan.
- Mix cajun spice, turmeric + oil in baking dish. Coat chicken thighs, roast 15 mins. Remove.
- Add rice + peppers to dish, place chicken on top. Pour over hot stock, bay & season. Cover with foil, bake 30 mins.
- Stir in peas, cook 10 mins more.
- Serve with coriander.
- Best eaten fresh on the day

We made this tonight and it was super spicy it was tasty but we couldn’t finish it.
Sorry to hear that – if it was something you wanted to try again you could add 1/4 of the cajun seasoning (different brands vary on spiciness too) and add paprika, cumin and coriander power to make up the other 3/4 – these dont have any spice heat.
