Cajun Chicken Traybake

Ingredients
  

  • 8 chicken thighs skin off
  • 3 tablespoons cajun spice seasoning
  • 1 teaspoon turmeric
  • 1 tablespoon of oil
  • 1 red pepper finely diced
  • 400 g basmati rice rinsed well
  • 900 ml hot chicken stock
  • 2 bay leaf
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Fresh coriander and lime to serve

Instructions
 

  • Heat oven to 180°C fan.
  • Mix cajun spice, turmeric + oil in baking dish. Coat chicken thighs, roast 15 mins. Remove.
  • Add rice + peppers to dish, place chicken on top. Pour over hot stock, bay & season. Cover with foil, bake 30 mins.
  • Stir in peas, cook 10 mins more.
  • Serve with coriander.
  • Best eaten fresh on the day

    1. Sorry to hear that – if it was something you wanted to try again you could add 1/4 of the cajun seasoning (different brands vary on spiciness too) and add paprika, cumin and coriander power to make up the other 3/4 – these dont have any spice heat.
