Cajun Chicken Traybake

This easy Cajun Chicken Traybake is the ultimate one-dish dinner — tender chicken thighs, fluffy basmati rice, and vibrant veggies infused with warm Cajun spices. Perfect for busy weeknights or cozy autumn evenings, it’s hearty, wholesome, and packed with flavour. Minimal prep, no fuss, and best of all, hardly any washing up!

Ingredients
  

  • 8 chicken thighs skin off
  • 3 tablespoons cajun spice seasoning
  • 1 teaspoon turmeric
  • 1 tablespoon of oil
  • 1 red pepper finely diced
  • 400 g basmati rice rinsed well
  • 900 ml hot chicken stock
  • 2 bay leaf
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Fresh coriander and lime to serve

Instructions
 

  • Heat oven to 180°C fan.
  • Mix cajun spice, turmeric + oil in baking dish. Coat chicken thighs, roast 15 mins. Remove.
  • Add rice + peppers to dish, place chicken on top. Pour over hot stock, bay & season. Cover with foil, bake 30 mins.
  • Stir in peas, cook 10 mins more.
  • Serve with coriander.
  • Best eaten fresh on the day
