We’ve had a few lovely weeks of hot weather here in Ireland, and while I’m absolutely not complaining, there are some days when the kitchen is simply too hot to turn the oven on!
And honestly, when the weather is this good, I want to be outside enjoying every minute of it rather than spending the day in the kitchen.

They’re also lovely to make ahead if you have friends coming over. Pop them out of the fridge, put them on a plate and serve alongside a cup of coffee.
Just one important thing if you’re sharing them: make sure you let everyone know they contain nuts, especially if you’re serving them to guests.

No-Bake Nutty Cups
Equipment
Ingredients
- 400 g runny peanut butter/ almond butter/ cashew/ seed butter
- 2 tbsp Frontier Foods coconut oil
- 200 g chopped nuts like pecans/ hazelnuts/ almonds or pumpkin/ sunflower seeds
- 60 g ground almonds or blended oats or protein powder
- 4 tbsp Frontier Foods maple syrup
- 180 g dark or milk chocolate melted
Instructions
- Line a cupcake tray with paper cases.
- Warm the peanut butter and coconut oil in a pot or microwave, keep a close eye so it doesn’t burn.
- Stir well so it’s nice and smooth.
- Mix in the chopped nuts, ground almonds and maple syrup.
- Scoop into the paper cases.
- Top with melted chocolate, set in the fridge for 3 hours.
- Storage: Store in the fridge for 1 week or freeze for 3 months.
