Easy Cheesy Beany Sauce

Ingredients
- 400 g cherry tomatoes I punnet
- 1 red pepper- deseeded and diced 1 inch pieces
- 1 Boursin cheese herb or plain
- Oil salt, pepper
- 1 can butter beans drained 240g drained
Instructions
- Preheat the oven 180ºC fan.
- Put the cherry tomatoes, diced peppers on a 9 inch baking tray.
- Drizzle with oil, sprinkle with salt and pepper, toss to coat.
- Make a space in the middle and add the Boursin cheese.
- Pop the dray in the oven for 30 minutes, until the tomatoes and peppers are soft and cooked through.
- Transfer to a blender and add in the butter beans, blend to your preferred texture, chunky or smooth.
- Serve with cooked gnocchi or spaghetti pasta and grated parmesan.
- Storage: Pour any extra into a food safe container and store in the fridge for 3 days.
