Carrot and Honey Baked Oats,
Equipment
Ingredients
- 225 g porridge oats
- 2 tsp ground cinnamon
- 1 tsp mixed spice nutmeg,caraway,ginger mix
- 50 g seeds – pumpkin/sunflower
- 20 g desiccated coconut
- 1 medium carrot grated 120g
- 1.5 tsp baking powder
- 2 tbsp raisins
- 300 ml milk
- 2 eggs
- ½ cup honey 150g
- Optional:
- Cream cheese frosting
- 150 g full fat cream cheese mixed with ¼ cup honey 80g
Instructions
- Preheat the oven 180ºc fan. Line an 8 inch square tin with baking parchment paper.
- Measure the oats, cinnamon, mixed spice, seeds, coconut, grated carrot, baking powder and raisins into a big bowl. Mix really well.
- Measure the milk, eggs and honey into a jug, whisk well. Pour into the mixing bowl and stir to combine.
- Pour into the prepared tin and bake for 25-30 minutes approximately. Test with a skewer when it comes out clean. Leave to cool completely.
- The cream cheese frosting is optional. You can add it all and cut it into squares or leave it off.
- Storage: Keep the bites in an air tight container for 3 days. Freeze in ziplock bags for 3 months.
