Ingredients
  

  • 225 g porridge oats
  • 2 tsp ground cinnamon
  • 1 tsp mixed spice nutmeg,caraway,ginger mix
  • 50 g seeds - pumpkin/sunflower
  • 20 g desiccated coconut
  • 1 medium carrot grated 120g
  • 1.5 tsp baking powder
  • 2 tbsp raisins
  • 300 ml milk
  • 2 eggs
  • ½ cup honey 150g
  • Optional:
  • Cream cheese frosting
  • 150 g full fat cream cheese mixed with ¼ cup honey 80g

Instructions
 

  • Preheat the oven 180ºc fan. Line an 8 inch square tin with baking parchment paper.
  • Measure the oats, cinnamon, mixed spice, seeds, coconut, grated carrot, baking powder and raisins into a big bowl. Mix really well.
  • Measure the milk, eggs and honey into a jug, whisk well. Pour into the mixing bowl and stir to combine.
  • Pour into the prepared tin and bake for 25-30 minutes approximately. Test with a skewer when it comes out clean. Leave to cool completely.
  • The cream cheese frosting is optional. You can add it all and cut it into squares or leave it off.
  • Storage: Keep the bites in an air tight container for 3 days. Freeze in ziplock bags for 3 months.
