- 225 g porridge oats
- 2 tsp ground cinnamon
- 1 tsp mixed spice nutmeg,caraway,ginger mix
- 50 g seeds - pumpkin/sunflower
- 20 g desiccated coconut
- 1 medium carrot grated 120g
- 1.5 tsp baking powder
- 2 tbsp raisins
- 300 ml milk
- 2 eggs
- ½ cup honey 150g
- Optional:
- Cream cheese frosting
- 150 g full fat cream cheese mixed with ¼ cup honey 80g
Preheat the oven 180ºc fan. Line an 8 inch square tin with baking parchment paper.
Measure the oats, cinnamon, mixed spice, seeds, coconut, grated carrot, baking powder and raisins into a big bowl. Mix really well.
Measure the milk, eggs and honey into a jug, whisk well. Pour into the mixing bowl and stir to combine.
Pour into the prepared tin and bake for 25-30 minutes approximately. Test with a skewer when it comes out clean. Leave to cool completely.
The cream cheese frosting is optional. You can add it all and cut it into squares or leave it off.
Storage: Keep the bites in an air tight container for 3 days. Freeze in ziplock bags for 3 months.
