There’s nothing better than making the most of the sunshine with a barbecue, and these Bang Bang Chicken Skewers have quickly become a favourite in our house. They’re packed with flavour, incredibly easy to throw together, and are made with chicken thighs, making them much more budget-friendly than using chicken breast. The simple marinade is made from store cupboard ingredients, so there’s a good chance you already have everything you need.

I made these Bang Bang Chicken Skewers when my family came to visit over the weekend, and they went down so well. There’s something special about everyone gathering outside, chatting while the food cooks and making the most of the warm evenings.

For dessert, I made a batch of my homemade Magnums, which were the perfect sweet treat after a barbecue. They’re always a hit and disappear just as quickly as the main course!

Enjoying the Garden

It’s been lovely finally having the weather to sit outside and enjoy the garden. Like many people, I started the year with big plans to completely transform the outdoor space with lots of planting and new flower beds. As always though, life has other ideas!

I’m reminding myself that it doesn’t all have to be done at once. One step at a time, and little by little the garden will come together. In the meantime, I’m simply enjoying having somewhere to sit with good food, good company, and a bit of sunshine.

Bang Bang Chicken Skewers

Make these easy Bang Bang Chicken Skewers with juicy chicken thighs and a simple pantry marinade. Perfect for barbecues or the grill, served with salad, wedges or slaw for a delicious summer meal.

Ingredients
  

  • 1600 g boneless skinless chicken thighs cubed
  • 2 tbsp olive oil
  • 2 tsp paprika
  • 2 tsp garlic granules
  • 2 tsp salt
  • 1 tsp black pepper
  • Sauce
  • 400 g mayonnaise
  • 200 g sweet chili sauce
  • 2 tbsp ketchup or Sriracha ketchup is mild for kids
  • 2 tbsp honey

Instructions
 

  • Soak wooden skewers in water for 30 minutes.
  • Preheat oven to 220°C (200°C fan) or heat a grill/ BBQ to medium-high.
  • Mix chicken with olive oil, paprika, garlic granules, salt, and black pepper. Thread onto skewers.
  • Combine mayonnaise, sweet chili sauce, ketchup or Sriracha, and honey to make the bang bang sauce.
  • Divide the sauce: use 1/2 for brushing before cooking and reserve the remaining 1/2 to brush on with after cooking.
  • Brush skewers with the 1/2 portion of sauce and cook for 20–25 minutes in the oven (or 12–15 minutes on the grill), turning halfway, until cooked through.
  • Drizzle or brush with the remaining sauce before serving.
