Bang Bang Chicken Skewers
Make these easy Bang Bang Chicken Skewers with juicy chicken thighs and a simple pantry marinade. Perfect for barbecues or the grill, served with salad, wedges or slaw for a delicious summer meal.

- 1600 g boneless skinless chicken thighs cubed
- 2 tbsp olive oil
- 2 tsp paprika
- 2 tsp garlic granules
- 2 tsp salt
- 1 tsp black pepper
- Sauce
- 400 g mayonnaise
- 200 g sweet chili sauce
- 2 tbsp ketchup or Sriracha ketchup is mild for kids
- 2 tbsp honey
Soak wooden skewers in water for 30 minutes.
Preheat oven to 220°C (200°C fan) or heat a grill/ BBQ to medium-high.
Mix chicken with olive oil, paprika, garlic granules, salt, and black pepper. Thread onto skewers.
Combine mayonnaise, sweet chili sauce, ketchup or Sriracha, and honey to make the bang bang sauce.
Divide the sauce: use 1/2 for brushing before cooking and reserve the remaining 1/2 to brush on with after cooking.
Brush skewers with the 1/2 portion of sauce and cook for 20–25 minutes in the oven (or 12–15 minutes on the grill), turning halfway, until cooked through.
Drizzle or brush with the remaining sauce before serving.
