You know it’s truly summer when the kids start asking for ice cream before breakfast—every hour, on repeat. While I’m all for the occasional treat, I’ve found a delicious middle ground that keeps everyone happy—and their tummies a little happier too. This 4-Ingredient Pineapple Nice Cream is perfect for hot summer days and satisfying those constant ice cream cravings!
It’s sweet, refreshing, ridiculously creamy, and made from just four ingredients I usually have on hand. No dairy, no weird additives—just real fruit, a little honey, and a whole lot of sunshine in every scoop.
The other day, we spread out a big blanket in the garden—nothing fancy, just a few cushions, some sliced watermelon, a thermos of tea for me (because always), and this batch of nice cream scooped into little bowls. The kids brought out their toy dinosaurs and some crayons, and we spent a solid hour outside in our own little world.
It reminded me that summer doesn’t have to mean big trips or elaborate plans. Sometimes, the magic is right outside your back door.
