We’ve had some great sunny days. With summer eating in mind and we’re hopeful that we’ll get mores chances to BBQ and eat outside. These recipes are easy, delicious and ideal. And if the sun doesn’t shine they can be cooked on the pan, oven or air fryer! This “Sunday Reset:Plan, Shop, Prep” is perfect for warmers days when you want to get out of the kitchen quick and enjoy the sun!
I like to check what I already have in the cupboards, fridge and freezer.
Then make a plan of the meals for the week, write a shopping list and head to the shops. Once I have everything I put on some tunes and get stuck into the prep. I often make double or triple of the recipe so I have extra burgers and chicken to freeze for another day.
Juicy Homemade Beef Burgers

You’ll love these homemade beef burgers because they’re quick, easy, and packed with flavour. Each bite is juicy, satisfying, and far better than anything shop-bought. They work perfectly on the barbecue or cooked in a pan indoors.
BBQ Chicken, Coconut Rice and Corn

This dish is the perfect addition to your “Sunday Reset:Plan, Shop, Prep”-ideal for summer BBQs when you want something different. I first tried something similar while on holiday during a summer trip. It was so delicious I knew I had to recreate it at home. Travel always inspires me and brings new ideas into my cooking. I love turning those holiday flavours into simple family meals everyone enjoys.
Lemon and Spring Onion Potato Salad

I absolutely love potato salad, but instead of the traditional creamy mayonnaise dressing, this version uses a bright, zesty lemon dressing. It lifts the potatoes beautifully and pairs especially well with seafood or chicken. It’s light, flavourful, and perfect for the warmer months when you want something fresh and satisfying.
Super Soft Milk Buns

Soft, fluffy, and just a little sweet, they’re sure to become a family favourite in your house. Whether you pack them in the lunchbox, serve them for dinner, or enjoy them as a treat, they’ll disappear quickly!
