Simple Summer Berry Crumble

This Simple Summer Berry Crumble is a delicious, healthier take on a family favourite. Made with juicy summer berries, oats and no refined sugar when using honey or maple syrup, it’s quick and easy to prepare and perfect for making with the kids. Serve warm with yoghurt for a simple dessert the whole family will love.

Ingredients
  

  • 150 g plain flour
  • 150 g jumbo oats
  • 120 g local honey or maple syrup or 150g light brown sugar
  • 180 g cold butter diced
  • For the filling
  • 600 g mixed berries strawberries, blueberries and raspberries
  • 2 tbsp cornflour
  • 2 tsp vanilla extract
  • To serve
  • Greek yoghurt custard or vanilla ice cream.

Instructions
 

  • Preheat the oven to 170°C fan. Wash the berries in water with a capful of white or cider vinegar, then drain well.
  • Add the berries to a baking dish and toss with the cornflour and vanilla.
  • Rub the butter into the flour and oats until the mixture resembles chunky breadcrumbs. Stir through the honey or maple syrup until crumble clusters form. (If using sugar, stir it through instead.)
  • Scatter over the berries and bake for 35–40 minutes, until golden and bubbling. Leave to stand for 10 minutes before serving.
  • Tip: Frozen berries work perfectly too—just add an extra 5–10 minutes to the cooking time.
  • Best eaten on day
