Christmas Mince Pie Muffins

Ingredients
  

  • 200 g self-raising flour
  • 50 g oats
  • 80 g sugar
  • ½ teaspoon baking powder
  • 100 g melted butter
  • 100 ml milk
  • 2 eggs
  • Zest of ½ orange
  • 200 g mincemeat shop-bought mince pie filling
  • 50 g milk chocolate chips plus extra for sprinkling on top
  • Serve with freshly whipped cream and a dusting of icing sugar.

Instructions
 

  • Preheat the oven 180°C. Line 1 muffin tins with 12 paper cases
  • To the mixing bowl add the self raising flour, oats, sugar, baking powder and orange zest mix really well. Stir in the chocolate chips.
  • Melt the butter in a jug in the microwave. Then add the milk and crack in the eggs and mix well. Stir through the mincemeat. Pour into the mixing bowl and stir to combine.
  • Scoop into the muffin cases. Top with a few extra chocolate chips.
  • Bake in the oven for 20-25 minutes. To check if they are cooked use a cocktail stick, when it comes out clean they’re ready.
  • Storage: Store at room temperature for up to 3 days or freeze for 3 months
