Total Time 1 hour hr 10 minutes mins
- For the cake:
- 200 g milk chocolate chopped
- 200 g butter cubed, I use salted
- 100 ml warm water
- 2 eggs
- 100 g soft brown sugar
- 100 g sour cream
- 200 g self raising flour
- 50 g cocoa powder
- 1 teaspoon baking powder
- For the fudge frosting:
- 100 g milk chocolate chopped
- 200 ml condensed milk
- 100 g butter cubed
- 1 tablespoon cocoa powder
Preheat the oven 180ºc fan. Line a 9 inch baking tray with baking parchment paper.
Melt the chocolate and butter together in the microwave or on low in a small pot. Stir well then add the water, stir again.
Meanwhile, whisk the eggs and sugar until they turn pale yellow. Whisk in the chocolate mix and the sour cream. Sieve in the flour, cocoa powder and baking powder, stir to combine.
Pour into the prepared tin. Bake for 40 minutes, approximately, until baked and a cocktail stick comes out clean. After 5 minutes, remove from the tin. Leave to cool completely.
For the fudge frosting:
Measure the chocolate, condensed milk and butter into a heatproof jug, microwave until melted, it took me 2 minutes. Or melt in a small pot on low. Stir well, then mix through the cocoa powder. Leave to cool at room temperature.
Once the frosting has cooled and thickened, pour over the cake, it should be pourable but not too runny. Decorate as you wish.
