Carrot and cheese wraps
Quick, healthy, and kid-approved carrot & cheese wraps! Gluten-free, high in protein and fibre, perfect for lunchboxes, busy mornings, or a fun twist on sandwiches.

Servings 1 Adult ( or 2 kids portions)
- 2 carrots grated 200g
- 2 large eggs
- 100 g grated mix cheddar and mozzarella
- Salt & pepper to taste
Preheat the oven 180ºc fan.
Line a swiss roll tin with non-stick parchment paper, mine is 32 x 23 x 2.5cm. Lightly oil the paper if you wish.
Mix all the ingredients together in a bowl.
Pour onto the tray. Smooth and spread evenly with a rubber spatula.
Bake for 25 minutes approximately.
Cool for a few minutes, then peel off the paper.
Fill with your favourite sandwich filling, roll cut and enjoy.
It’s best eaten on the day of making.
Storage: Keep the unfilled wrap in the fridge for 1 day. Not suitable for freezing.
