Carrot and cheese wraps

Quick, healthy, and kid-approved carrot & cheese wraps! Gluten-free, high in protein and fibre, perfect for lunchboxes, busy mornings, or a fun twist on sandwiches.

Ingredients
  

  • 2 carrots grated 200g
  • 2 large eggs
  • 100 g grated mix cheddar and mozzarella
  • Salt & pepper to taste

Instructions
 

  • Preheat the oven 180ºc fan.
  • Line a swiss roll tin with non-stick parchment paper, mine is 32 x 23 x 2.5cm. Lightly oil the paper if you wish.
  • Mix all the ingredients together in a bowl.
  • Pour onto the tray. Smooth and spread evenly with a rubber spatula.
  • Bake for 25 minutes approximately.
  • Cool for a few minutes, then peel off the paper.
  • Fill with your favourite sandwich filling, roll cut and enjoy.
  • It’s best eaten on the day of making.
  • Storage: Keep the unfilled wrap in the fridge for 1 day. Not suitable for freezing.
