Watermelon & Strawberry Juice has become our favourite drink now that the sun is finally shining in the west of Ireland! Summer has finally reached our shores, and my two are officially on their school holidays.

We’re making the most of every bit of sunshine while it lasts – beach trips, garden picnics, walks, and little road trips whenever we can. There’s something so lovely about having nowhere in particular to be and simply enjoying those long, bright days together.

One thing I always have ready is our big cooler bag. Before we head out, I fill it with sandwiches, fruit, snacks, plenty of water, and, if we’re lucky, a homemade juice. It saves us having to stop and buy food while we’re out, which really helps us stick to our budget. Just as importantly, I know exactly what’s gone into everything we’re eating and drinking.

My kids absolutely love juice. We don’t have it every day, but it’s a lovely weekend treat or something special to pack on a hot summer’s day. This Watermelon & Strawberry Juice has become one of our favourites. It’s naturally sweet, packed with fresh fruit, and incredibly refreshing when served straight from the cooler with lots of ice.

Watermelon & Strawberry Juice

This easy Watermelon & Strawberry Juice is a refreshing summer drink made with fresh watermelon, juicy strawberries and a squeeze of lime. Naturally sweet, hydrating and ready in just 5 minutes, it's perfect for hot days, picnics, beach trips and a delicious treat the whole family will love.

Servings 4 (250ml bottles)

Ingredients
  

  • 800 g watermelon rind removed and roughly chopped
  • 300 g strawberries hulled
  • Juice of 1 lime
  • 250 ml chilled water
  • Handful of fresh mint leaves optional

Instructions
 

  • Add the watermelon, strawberries, lime juice, chilled water and mint (if using) to a high-speed blender.
  • Blend for 1–2 minutes until completely smooth.
  • Taste and add a little more lime juice if you’d like a sharper flavour.
  • For a smoother juice, strain through a fine sieve into a large jug. This step is optional.
  • Pour the juice into four sterilised 250ml bottles or use food safe plastic bottles, seal and refrigerate until chilled.
  • Shake well before serving, as the juice will naturally separate.
  • Tips: Chill the fruit before blending for an extra refreshing drink.
  • Freeze leftover juice into ice lolly moulds or ice cube trays for smoothies.
  • Add a few fresh basil leaves instead of mint for a delicious twist.
  • This recipe contains no added sugar—the natural sweetness comes from the fruit.
  • Storage: Store in the fridge for up to 2 days. Shake well before drinking. Not suitable for freezing once bottled.
