There’s something about warm weather in Ireland that feels magical, like a little gift we never take for granted. This past weekend in Galway on the west coast was one of those times, and it felt so welcome. It had me thinking about easy, refreshing things like raspberry chia pudding to have ready at home.

After so much rain, the sunshine felt long overdue and lifted everyone’s mood almost instantly. As always, once it arrives, everyone tries to make the most of every single minute. The kids were up early and out the door quickly, eager to meet their friends. Soon it felt like every child in the neighbourhood was outside together, playing and laughing.

I took a few quiet minutes that morning to throw together a raspberry chia pudding before heading outside. It’s something I make often because it’s simple, nourishing, and perfect to have ready later in the day. The raspberries add a fresh, slightly sharp sweetness that feels especially good when the weather is warm. Chia seeds bring fibre, protein, and plenty of goodness, helping keep everyone satisfied and full of energy.

I usually add a couple of spoonfuls of oats to make it more filling, especially for growing kids. Sometimes I include desiccated coconut too, which adds texture and a subtle sweetness if I have it. Milk brings everything together, and any type works depending on what you already have at home. A little honey adds just enough sweetness without taking away from the natural flavour of the berries.

The kids came back around lunchtime, hungry and full of stories from their morning outside. We kept things simple with ham sandwiches and homemade lemonade, eaten together out in the garden. Luckily I had taken a few of my homemade bread rolls out of the freezer the night before, so it made for a quick lunch.

Before long, they headed out again to enjoy another few hours of sunshine with their friends. Days like these remind you how much everyone benefits from time outside in the fresh air.

Raspberry Chia Pudding

Ingredients
  

  • 1 cup fresh raspberries plus extra raspberries to garnish
  • 2 tablespoons oats
  • 2 tablespoons desiccated coconut -optional
  • 300 ml milk or your choice
  • 1-2 tablespoons honey
  • 2-3 tablespoons chia seeds

Instructions
 

  • Blend the raspberries, oats, coconut, milk and honey until smooth, pour into a bowl, stir in the chia seeds.
  • Cover and set in the fridge for 2-3 hours.
  • Divide into 3 small pots.
  • Serve with extra fresh raspberries.
  • Keep in fridge for up to 3 days
