Mango Chicken Curry

Ingredients
  

  • 500 g chicken breast cubed
  • 500 g mango chunks 300g for the sauce, 200g add later
  • 1 tin Full Fat Coconut Milk
  • 2 med onions diced
  • 2 garlic cloves grated
  • 1 inch ginger grated
  • 2 tbsp mild curry powder
  • 1 tsp turmeric
  • 1.5 tsp salt
  • 1.5 tbsp Coconut Oil
  • 2 tsp Maple Syrup
  • ½ lime
  • Serve with boiled rice naan bread, peas, sweetcorn, roasted peppers

Instructions
 

  • Cook onions in coconut oil until soft.
  • Add garlic, ginger, spices and salt cook for a few minutes.
  • Add 300g mango and coconut milk, simmer 5 mins then blend smooth.
  • Return to the pan, add chicken and remaining 200g mango and simmer 15–20 mins until cooked through.
  • Stir in maple syrup and lime juice.
  • Serve with rice and naan.
  • Storage: Store in the fridge for 3 days or freezer for 3 months.
