Ingredients
  

  • 1.5 tbsp olive oil
  • 2 onions
  • 1 red pepper diced
  • 2 small sweet potatoes peeled and diced
  • 1 heaped teaspoon paprika
  • 1 heaped teaspoon cumin
  • 1 tsp salt
  • 1 tbsp honey
  • 2 tins chopped tomatoes
  • ½ tin water (use your tomato tin)

Instructions
 

  • Soften the Onions
    In a wide pot, warm 1.5 tablespoons of olive oil over medium heat. Add the diced onions and cook for 5-10 minutes, stirring occasionally, until softened and translucent. This gentle cooking brings out their natural sweetness.
  • Add Veggies & Spices
    Add the diced red peppersweet potatopaprikacuminsalt, and honey to the pot. Stir well to coat the vegetables in the flavorful spices and honey. Cook for 2 minutes to awaken the aromas and slightly caramelize the ingredients.
  • Add Tomatoes & Water
