  • 2 red onions quartered
  • 4 garlic cloves peeled
  • 1 tsp mild curry powder
  • 1 litre hot stock veg or chicken
  • 100 ml cream
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper

Instructions

  • Preheat the oven to 180°C fan.
  • Place the butternut squash skin side up, red onions and garlic on a large baking tray. Drizzle with olive oil and season with salt and pepper.
  • Roast for 35-40 minutes, until easily pierced with a sharp knife and lightly caramelised.
  • Scoop out the cooked squash and transfer to a large saucepan or blender. Add a spoon of curry powder, salt and pepper, the hot stock and blend until smooth.
