Is it just me, or does Sunday night seem to come around way too fast?
One minute it’s Friday afternoon and we’re dreaming of lie-ins and slow mornings… and the next thing you know, it’s Sunday evening, the kids are in the bath, the uniforms are somewhere in the laundry pile, and we’re back to thinking about lunchboxes.
If you’re anything like me, you want to add something homemade to the lunchbox — but time isn’t always on our side. That’s where these quick, 3-ingredient bread rolls come in. They’re soft, fluffy, super easy to make, and you’ve probably already got everything you need in the fridge. No yeast, no proving, no faff — just mix, shape, and bake.
Why You’ll Love These 3 Ingredient Bread Rolls:
- Only 3 ingredients — flour, yoghurt, and buttermilk. That’s it!
- No yeast or rising time — they’re ready in under 45 minutes, start to finish.
- Healthier than shop-bought — no additives, no preservatives, just simple goodness.
- Freezer-friendly — perfect for batch baking and pulling out midweek.
- Kid-approved — soft, versatile, and great with all kinds of fillings.
- Budget-friendly — made with fridge and pantry staples you probably already have.
Baking With Kids? These Rolls Are Perfect!
If you’ve got little helpers around on a Sunday afternoon, this is a brilliant recipe to make with them. While the bread rolls are baking why not make one of my favourite – No bake snack recipes for the week too.
They’ll love getting stuck in — especially shaping the dough into little bread rolls!
Let them sprinkle the flour on top, brush the rolls with a bit of milk or egg wash if you like, and help load them onto the tray.
It’s a fun, easy baking moment that feels productive — and bonus: you’re getting ahead for school lunches too. Win-win.
So if your Sunday is flying by (again), and the idea of baking feels like a lot, give these a try.
Bake a batch, freeze a few, and that’s one lunchbox job ticked off the list.
Now, if only we could find a quick recipe for paired socks…
Happy baking! Let me know what your favourite fillings are!

3-ingredient bread rolls
Equipment
Ingredients
- 500 g self raising flour- plus extra for rolling
- 400 g Greek style yoghurt
- 150 g buttermilk
Instructions
- Preheat the oven 180ºc fan. Line a large tray with baking parchment paper.
- Measure and sieve the flour into a mixing bowl. Weigh the yoghurt and buttermilk into a jug, mix well. Note* I find it easiest to measure these both as a total weight of 550g, as it’s most accurate.
- Pour the yoghurt mix into the bowl with the flour, stir to combine. Flour the work top and turn the dough out. Keep the bag of flour to hand. Gently knead the dough, if its sticky add a bit more flour. Divide the dough into 8 even balls approx 130g each- use the scale if you like.
- Shape into balls, place on the tray. Dust lightly with flour. Bake for 25-30 minutes in the oven until cooked through. Leave to cool.
- Once cool, slice in half and fill with your favourite sandwich fillings.
- ❄️Storage- Keep for 2 days in an airtight container. Freeze for 3 months in a ziplock bag. Defrost overnight when you need them.
