A little planning at the weekend can make such a difference during busy weeks. My Sunday Reset: Plan, Shop, Prep routine helps me stay organised, save time and have simple homemade food ready for the days ahead.

During the summer holidays, I call my kitchen prep days “Picnic Prep: Plan, Shop, Prep” because it feels like we’re always packing bags for beach trips, road trips, days out and summer camps.

I keep up this routine throughout the summer to make busy days a little easier. These four recipes—Watermelon & Strawberry Juice, Spinach & Feta Egg Muffins, Chicken & Sweetcorn Pasta Salad and Oat & Chocolate Chip Cookies—are quick, easy and perfect for getting ahead. They’re ideal for picnics, beach days and family outings, and they work just as well in lunch boxes for summer camps and the school year.

My kids absolutely love juice. We don’t have it every day, but it’s a lovely weekend treat or something special to pack on a hot summer’s day.
