Ingredients
  

  • 2 ripe bananas mashed
  • 250 g plain flour
  • 2 tsp baking powder
  • 100 g sugar
  • 100 ml light oil (like sunflower, vegetable, or olive oil)
  • 2 large eggs
  • 180 g Greek or plain yoghurt
  • 80 g chocolate chips plus extra for topping

Instructions
 

  • Preheat the oven:
    Set your oven to 170°C or 325 ℉ and line a muffin tin with paper cases.
  • Mash the bananas:
    Peel and mash the ripe bananas in a small bowl until smooth.
  • Prepare the dry ingredients:
    In a large mixing bowl, measure the flour, baking powder, and sugar. Sift everything together to combine evenly.
  • Mix the wet ingredients:
    In a separate jug, whisk together the oil, yoghurt, and eggs until smooth.
  • Combine the ingredients:
    Pour the wet mixture into the bowl with the dry ingredients. Add the mashed bananas and chocolate chips. Gently fold everything together until just combined—don’t overmix!
  • Scoop into cases:
    Divide the batter evenly between the muffin cases. Sprinkle a few extra chocolate chips on top of each muffin for a bakery-style finish.
  • Bake to perfection:
    Place the muffins in the oven and bake for 25-28 minutes, or until golden and a skewer inserted in the center comes out clean.
  • Cool and enjoy:
    Transfer the muffins to a wire rack to cool before digging in.
