- 2 ripe bananas mashed
- 250 g plain flour
- 2 tsp baking powder
- 100 g sugar
- 100 ml light oil (like sunflower, vegetable, or olive oil)
- 2 large eggs
- 180 g Greek or plain yoghurt
- 80 g chocolate chips plus extra for topping
Preheat the oven:Set your oven to 170°C or 325 ℉ and line a muffin tin with paper cases. Mash the bananas:Peel and mash the ripe bananas in a small bowl until smooth. Prepare the dry ingredients:In a large mixing bowl, measure the flour, baking powder, and sugar. Sift everything together to combine evenly. Mix the wet ingredients:In a separate jug, whisk together the oil, yoghurt, and eggs until smooth. Combine the ingredients:Pour the wet mixture into the bowl with the dry ingredients. Add the mashed bananas and chocolate chips. Gently fold everything together until just combined—don’t overmix! Scoop into cases:Divide the batter evenly between the muffin cases. Sprinkle a few extra chocolate chips on top of each muffin for a bakery-style finish. Bake to perfection:Place the muffins in the oven and bake for 25-28 minutes, or until golden and a skewer inserted in the center comes out clean.
