When it comes to getting kids to eat their vegetables, sometimes it takes a little creativity and a whole lot of deliciousness. This Kid-Approved Sweet Potato Soup is a guaranteed winner for even the pickiest eaters! Packed with nutrients from the sweet potatoes and a rich, comforting flavor, this soup is perfect for chilly days, family dinners, or a healthy snack. And the best part? It's incredibly easy to make, so you can whip it up in no time and have a bowl of warmth ready for the whole family.

- 2 medium onions finely diced
- 4 cloves garlic finely chopped
- 4 small sweet potatoes (about 600g), peeled and diced small
- 650-750 ml hot stock (chicken or vegetable - about 1 stock pot, ensure to use gluten free if making gluten free)
- Salt, to taste (optional, depending on your stock)
Optional Toppings
- Crispy bacon bits (for a fun, savoury touch)
- Drizzle of extra virgin olive oil (for added richness)
Sauté the Onions and Garlic
Start by heating a wide pot over medium heat. Add 1 tablespoon of oil (olive oil or your preferred cooking oil works great) to the pot. Once the oil is warm, add the finely diced onions and cook for about 5 minutes, stirring occasionally, until they become soft and translucent.
Next, add the 4 cloves of finely chopped garlic. Let it cook for another few minutes until the garlic becomes fragrant and soft. At this point, your kitchen should be filled with an irresistible aroma!
Cook the Sweet Potatoes
Now it’s time to add the peeled and diced sweet potatoes to the pot. Stir them around to mix with the onions and garlic. Pour in 650-750ml of hot stock, enough to just cover the vegetables. You can use chicken stock for a richer flavour or vegetable stock for a vegetarian-friendly version. If you like, you can add a pinch of salt, but I usually skip it because stock cubes tend to have enough salt already.
Bring the mixture to a gentle simmer and let it cook, uncovered, for about 15-20 minutes, or until the sweet potatoes are soft and tender. The pieces should break apart easily with a fork when they’re done.
Blend to Desired Consistency
Once the sweet potatoes are cooked through, it’s time to blend the soup! You can use an immersion blender directly in the pot for a smooth and creamy texture, or transfer the soup to a stand blender in batches. Blend until you reach your desired consistency—whether you prefer a smooth, velvety soup or a chunkier texture with some sweet potato bits still intact.
Optional ToppingsFor an extra burst of flavor and texture, crispy bacon bits make a fantastic topping. Just fry up some bacon until crispy, then crumble it over the soup before serving.
