Crispy Parmesan Sweet Potatoes
These Crispy Parmesan Sweet Potatoes are the perfect sweet, salty, and cheesy side dish! Made on one tray with just a handful of ingredients, they’re easy, delicious, and kid-friendly — great for dinner, BBQs, or a fun snack.

- 6 small sweet potatoes washed, dried and cut in half lengthwise
- 2 tablespoons cajun spice mix or just smoked paprika
- Pinch of salt
- Spray oil to coat
- 1 cup of grated parmesan cheese 90g approx
Preheat the oven 180c fan. Line a medium sized baking tray with non-stick parchment paper.
Put the cut sweet potatoes into a mixing bowl, sprinkle over the cajun spice, salt and spray lightly with oil.
Sprinkle the parmesan evenly all over the tray.
Place the sweet potatoes flesh side down on the tray. Spray again with the oil.
Roast in the oven for 30 to 40 minutes, until the potatoes pierce easily with a knife.
Best served hot and eaten on the day.
