Ingredients
  

  • 400 g plain flour
  • 2 tsp baking powder
  • 100 g salted butter at room temperature
  • 100 g grated cheddar cheese (or any cheese you like)
  • 2 eggs
  • 140 ml milk (approximate; adjust as needed)
  • Sesame seeds (optional, for topping)

Optional Add-Ins

  • 2 tbsp chopped fresh chives, spinach, parsley
  • A pinch of chili flakes or chopped fennel seeds
  • 1 peeled or diced apple or a handful of raisins for a sweet twist

Instructions
 

  • Preheat the oven:
    Set your oven to 180°C (fan) or 350℉ and line a baking tray with parchment paper.
  • Prepare the dry ingredients:
    Sieve the flour and baking powder into a large mixing bowl. Stir to combine.
  • Whisk the wet ingredients:
    Measure the milk and crack the eggs into a jug. Whisk well with a fork to create an egg-wash.
  • Work in the butter:
    Add the butter to the flour mixture. Rub it in gently with your fingertips until the mixture resembles breadcrumbs.
  • Add cheese and extras:
    Stir in the grated cheese and any optional add-ins (like chives or apples).
  • Bring the dough together:
    Gradually pour in the milk and egg mixture, mixing with a fork until the dough starts to come together. You may not need all the liquid. If the dough feels dry, add a little more milk.
  • Knead gently:
    Transfer the dough to a floured work surface and knead lightly until smooth. Avoid overworking the dough—it should be soft but not sticky.
  • Shape and cut:
    Place the dough on the lined baking tray and gently flatten it into a round. Flour a large knife to prevent sticking, then cut the round into 8 wedges.
  • Brush and top:
    Brush the tops with any leftover egg-wash and sprinkle with sesame seeds if desired.
  • Bake:
    Bake in the preheated oven for 20-22 minutes, or until golden brown and cooked through.
  • Cool and serve:
    Let the scones cool slightly on a wire rack before serving.
