Banana Fudge Brownie
These fudgy banana brownies are rich, gooey, and made with just a few simple ingredients! A quick and easy treat perfect for after school, lunchboxes, or weekend baking with kids. Nut-free option included!

- 2 ripe medium bananas or 1 cup apple puree
- 2 eggs room temperature
- 75 g brown sugar ½ cup
- 60 g plain flour ⅓ cup
- 40 g cocoa powder 1/4 cup
- 60 g smooth nut butter - peanut/tahini/almond - will all work here I used peanut butter
- 70 g chocolate chips ½ cup
Preheat the oven 180ºC fan. Line an 8 inch square baking tin with parchment paper.
Mash the bananas on a small board. In a mixing bowl crack in the eggs, add the brown sugar and whisk well for 1 minute. Add in the mashed bananas and peanut butter stir to combine.
Sieve in the flour and cocoa powder, gently stir to combine, don’t overwork it. Add in half the chocolate chips. Pour into the prepared baking tin. Scatter the remaining chocolate chips on top.
Bake in the oven for about 15 minutes.
Cool and slice into squares. The texture is like fudge not cake.
Storage tips:
Store in an airtight container for 3 days.
If it’s warm in your kitchen, keep them in the fridge.
They freeze great for 3 months. Defrost in a container for about 2 hours.
