Crispy Parmesan Sweet Potatoes

These Crispy Parmesan Sweet Potatoes are the perfect sweet, salty, and cheesy side dish! Made on one tray with just a handful of ingredients, they’re easy, delicious, and kid-friendly — great for dinner, BBQs, or a fun snack.

Cook Time 30 minutes
Total Time 45 minutes

Servings 6

Ingredients
  

  • 6 small sweet potatoes washed, dried and cut in half lengthwise
  • 2 tablespoons cajun spice mix or just smoked paprika
  • Pinch of salt
  • Spray oil to coat
  • 1 cup of grated parmesan cheese 90g approx

Instructions
 

  • Preheat the oven 180c fan. Line a medium sized baking tray with non-stick parchment paper.
  • Put the cut sweet potatoes into a mixing bowl, sprinkle over the cajun spice, salt and spray lightly with oil.
  • Sprinkle the parmesan evenly all over the tray.
  • Place the sweet potatoes flesh side down on the tray. Spray again with the oil.
  • Roast in the oven for 30 to 40 minutes, until the potatoes pierce easily with a knife.
  • Best served hot and eaten on the day.
