Crispy Parmesan Sweet Potatoes
Ingredients
- 6 small sweet potatoes washed, dried and cut in half lengthwise
- 2 tablespoons cajun spice mix or just smoked paprika
- Pinch of salt
- Spray oil to coat
- 1 cup of grated parmesan cheese 90g approx
Instructions
- Preheat the oven 180c fan. Line a medium sized baking tray with non-stick parchment paper.
- Put the cut sweet potatoes into a mixing bowl, sprinkle over the cajun spice, salt and spray lightly with oil.
- Sprinkle the parmesan evenly all over the tray.
- Place the sweet potatoes flesh side down on the tray. Spray again with the oil.
- Roast in the oven for 30 to 40 minutes, until the potatoes pierce easily with a knife.
- Best served hot and eaten on the day.
