I’ve already shared a courgette version (which is fantastic, by the way), but today, I’m all about Crispy Cheesy Potato Slices. They’re seriously the easiest, most addictive snack or meal—and can be turned into a sandwich for a proper lunch.

Crispy Cheesy Potato Slice

A quick, easy, and delicious recipe perfect for busy mums. Crispy, cheesy, and totally customisable, these potato slices make the ideal lunch or snack for the whole family
Prep Time 20 minutes
Cook Time 25 minutes
Total Time 45 minutes
Course Lunch

Ingredients
  

  • 1 medium potato peeled
  • Spray oil salt and pepper
  • 2 handful grated cheese I use a cheddar and mozzarella mix

Instructions
 

  • Preheat the oven 180ºc fan.
  • Slice the potato to 2mm thickness – I recommend using a mandoline slicer so they are thin enough and similar thickness.
  • Layer on the baking tray over lapping ever so slightly.
  • Spray lightly with oil, season with salt and pepper.
  • Scatter the cheese on top.
  • Bake until golden and crispy, about 20 – 30 minutes.
  • I left mine to cool for 10 minutes, then sliced and filled with my favourite sandwich filling.
