Ingredients
  

  • 250 g tinned chickpeas (drained; about 1.5 cups)
  • 25 g oats (gf if needed) (¼ cup)
  • 100 g light tahini or nut butter (½ cup; use your favorite!)
  • 1 medium ripe banana (115g or substitute with ½ cup applesauce)
  • 1 tsp baking powder
  • 1 ½ tsp vanilla extract
  • 1 ½ tbsp maple syrup or honey
  • 1 tbsp water
  • 100 g dark chocolate chips (½ cup; diary-free if needed)
  • 100 g frozen raspberries (1 cup)

Instructions
 

  • Prep Your Baking Tin
    Preheat your oven to 170°C (fan) or 350℉. Line an 8-inch square tin with parchment paper to prevent sticking and ensure easy removal.
  • Make the Batter
    In a blender, combine the chickpeas, oats, tahini, banana (or applesauce), baking powder, vanilla extract, maple syrup, and water. Blend until completely smooth. Add half of the chocolate chips and blend briefly to mix them in.
  • Assemble the Blondies
    Pour the batter into the prepared tin, smoothing it out evenly with a spatula or the back of a spoon. Sprinkle the remaining chocolate chips and frozen raspberries over the top, gently pressing them into the batter.
  • Bake to Perfection
    Bake in the preheated oven for 25–30 minutes, or until the blondies are set and slightly golden on top. A toothpick inserted into the centre should come out clean (excluding the melted chocolate!).  Bake for a bit longer if they are very soft, as ovens vary.
  • Cool and Slice
    Let the blondies cool completely in the tin before slicing into 12 squares. This helps them firm up and makes slicing easier.

  • Freezer-Friendly: Freeze for up to 3 months. To enjoy, defrost in an airtight container at room temperature for 1–2 hours.
