I first spotted this genius idea from my lovely friend Ciara (@thetummyfairy) and I knew I had to try it. It’s gone viral for good reason!
This version has a sneaky high-protein twist, thanks to cottage cheese and eggs, plus a tortilla wrap base that saves time and cuts down on fuss. It’s light, nourishing, and ideal for hot summer days when you want something tasty but not too heavy.

Tortilla Wrap

This cheats quiche has become a firm favourite in my kitchen. It’s one of those recipes you’ll turn to again and again—especially when school’s out, you’re juggling 100 things, and just need something easy, nutritious and yum. No rolling pins, no blind baking, and no stress! I often serve it with a green salad or my homemade wedges!
Cheat’s quiche
Ingredients
- 1 tortilla wrap
- 3 eggs
- 100 g cottage cheese
- ½ red pepper sliced
- 20 g or a handful baby spinach
- 70 g or a handful grated cheese I used a mix of cheddar and mozzarella
- Salt and pepper to season
- Optional ad-ins: ham peperoni, smoked salmon, onion, mushrooms, fresh herbs or feta)
Instructions
- Preheat the oven 170ºc. Use an 8 inch or 9 inch dish or cake tin. Important: Add a piece of non-stick parchment paper to the dish, this will prevent the tortilla wrap from sticking or if the egg leaks out help too, and it will make it easier to remove once cooked.
- Place the tortilla on top of the paper in the tin, gently push it down to create a bowl shape. Crack the eggs in and add the cottage cheese, season and whisk with a fork.
- Next add the sliced red pepper and baby spinach, push down with the back of the fork. Sprinkle the cheese on top and 15-20 minutes, until the eggs have set and the cheese has melted.
- Leave to cool for a few minutes then remove from the tin. Slice and serve with salad.
- Serving suggestion: Eat hot or cold, with salad or homemade wedges.
- Storage: Keep in the fridge for 3 days.
- Reheat in the oven or air fryer 180c for 5 minutes. Note: If the bottom is soggy and soft, try toasting (after removing from the tin) if possible place the quiche on a non-stick dry frying pan on a medium heat, but be careful not to let it burn.
